Serves: 4-6 people
Ingredients for burgers:
500g sweet potato
1 tin black bean (180-200g)
1 tin sweet corn (180g)
1 cup oat flour
2 medium onion
3 tbsp. chipotle paste or sauce
2 tsp. extra virgin olive oil
1 tsp. salt
Ingredients for spiced cauliflower:
1 large head cauliflower
2 tsp. extra virgin olive oil
1 tsp. salt
¼ tsp. black pepper
¼ tsp. chilli powder
½ tsp. turmeric powder
¼ tsp. ground cumin
Ingredients for slaw:
½ head of small red cabbage
½ head iceberg lettuce
150g edamame beans
50g sunflower seeds
2 handfuls of curly kale
1 red bell pepper
1 small bunch spring onion
1 handful of coriander leaves
½ a lemon
2-3 tsp. extra virgin olive oil
Salt and black pepper
Ingredients for tahini dressing:
180g tahini paste
1/3 cup of water
5 garlic cloves
¾ cup fresh lemon juice
4 tbsp. agave syrup
2 tbsp. parsley
1 tsp. sea salt
¼ tsp. black pepper
Instructions:
- Pre-heat oven to 200 degrees C.
- Peel and dice sweet potato, onion and garlic, then add into a medium saucepan with 2 teaspoons of olive oil and cook on medium heat until potatoes are soft.
- Blend the potato and onion into a paste.
- Mix with your chipotle paste or sauce, oat flour, tinned sweetcorn and black beans, then season with salt.
- Divide mixture into 8-12 burgers bake and for 15 minutes or fry on both sides until brown
- Trim, wash and cut cauliflower into florets.
- Mix with 2 teaspoons of olive oil and season with salt, black pepper, turmeric, chilli powder and ground cumin, then roast for 12-14 min.
- Wash all your slaw vegetables, and then thinly slice the red cabbage, iceberg lettuce and spring onions.
- Remove the seeds and cut pepper into strips.
- Chop your kale and coriander.
- Mix all slaw ingredients together, and then season with salt and pepper, fresh lemon juice and olive oil.
- For the tahini paste, add into your food processor fresh garlic, lemon juice, light tahini paste, water, agave syrup, fresh parsley, salt, black pepper and blitz until smooth.
- Remove burgers and cauliflower from oven and serve.
