Breakfast Cookie Recipe

Ingredients:

200g jumbo gluten free oats

1 large ripe banana

70g organic raisins or sultanas

6 tablespoons coconut sugar

4 tablespoons coconut oil

4 tablespoons brown rice flour

1 tablespoon sunflower seeds

1 tablespoon pumpkin seeds

½ teaspoon bicarbonate of soda

½ teaspoon sea salt

½ teaspoon cinnamon power

Instructions:

  1. In large mixing bowl mash one ripe banana with a fork.
  2. Add melted coconut oil and all the other ingredients to the bowl.
  3. Combine all together.
  4. Divide mixture into 12 cookies or spread the mixture on flat baking tray (use baking parchment) and cook in the oven for 8-10 min at 175 degrees C.
  5. Cool down before serving, if you bake on the tray cut into 12 squares.
