Ingredients:
200g jumbo gluten free oats
1 large ripe banana
70g organic raisins or sultanas
6 tablespoons coconut sugar
4 tablespoons coconut oil
4 tablespoons brown rice flour
1 tablespoon sunflower seeds
1 tablespoon pumpkin seeds
½ teaspoon bicarbonate of soda
½ teaspoon sea salt
½ teaspoon cinnamon power
Instructions:
- In large mixing bowl mash one ripe banana with a fork.
- Add melted coconut oil and all the other ingredients to the bowl.
- Combine all together.
- Divide mixture into 12 cookies or spread the mixture on flat baking tray (use baking parchment) and cook in the oven for 8-10 min at 175 degrees C.
- Cool down before serving, if you bake on the tray cut into 12 squares.
